Light banana bread, which is nice as is or toasted. I have been experimenting with this recipe trying to use only a minimal amount of butter and no sugar. - marie

Ingredients

  • 2 cups self-raising flour
  • 1/2 cup Splenda sugar substitute
  • 2 eggs lightly beaten
  • 1/4 cup milk
  • 2 tbs butter melted
  • 3 tbs golden syrup
  • 3 bananas mashed

Method

  • Step 1
    Preheat oven to 180C.
  • Step 2
    Place flour and sweetener in a large bowl.

    Combine eggs, milk, butter and syrup in another bowl.
  • Step 4
    Add egg mixture and banana to the flour and mix well.
  • Step 5
    Pour mixture into a loaf tin lined with baking paper and bake for approximately 40 minutes.

Equipment

  • 1 11cm x 21cm loaf pan
Recipe Notes

I sometimes add 1/2 cup of walnuts or oats, just to vary the flavour and texture a little.
