Light banana bread, which is nice as is or toasted. I have been experimenting with this recipe trying to use only a minimal amount of butter and no sugar.
Ingredients
- 2 cups self-raising flour
- 1/2 cup Splenda sugar substitute
- 2 eggs lightly beaten
- 1/4 cup milk
- 2 tbs butter melted
- 3 tbs golden syrup
- 3 bananas mashed
Method

Step 1Preheat oven to 180C.

Step 2Place flour and sweetener in a large bowl.

Step 3Combine eggs, milk, butter and syrup in another bowl.

Step 4Add egg mixture and banana to the flour and mix well.

Step 5Pour mixture into a loaf tin lined with baking paper and bake for approximately 40 minutes.
Equipment
- 1 11cm x 21cm loaf pan
Recipe Notes
I sometimes add 1/2 cup of walnuts or oats, just to vary the flavour and texture a little.
