Ingredients

  • 2 tsp olive oil
  • 1 onion, finely chopped
  • 3 sheets puff pastry, thawed
  • 100g ham (deli), finely chopped
  • 1 1/2 cups cheese, finely grated
  • 4 eggs
  • 3/4 cup milk

Method

  • Step 1
    Preheat oven to 200C. Grease a 12 x 1/3 cup capacity muffin pan.
  • Step 2
    Heat oil in a small non-stick frying pan over medium heat. Add onion and cook for 3 minutes until soft. Set aside to cool.
  • Step 3
    Cut 4 x 10cm circles from each sheet of pastry. Use pastry to line muffin pan.
  • Step 4
    Combine onion, ham and cheese. Divide between pastry shells.
  • Step 5
    Combine eggs and milk in a jug. Whisk with a fork, then pour over ham mixture.
  • Step 6
    Bake for 20 minutes, or until puffed and golden. Stand in pan for 5 minutes, before transferring to a wire rack to cool.
