Tangy, great nibbles and suitable for freezing.
Ingredients
- 2 kg chicken wing
- 1 cup fresh lime juice
- 2 garlic clove crushed fresh
- 1/2 tsp salt *optional
- 1 water
Method

Step 1Trim off point of wings, cut into two pieces and place in flat glass dish suitable for marinating.

Step 2Add lime juice and garlic and marinate for several hours in refrigerator.

Step 3Transfer wings to baking dish, add just enough water to cover wings. Simmer on top of stove for 15 - 20 minutes or until liquid reduces to half.

Step 4Cook at 200C until liquid has evaporated and wings are golden brown. Be careful not to burn wings.
Recipe Notes
Serve up on large platter. Great nibbles at parties and barbeques. Can be prepared 24 hours in advance. Can be frozen half cooked and then reheated in oven until golden brown before serving. Nice change from wings done in soy sauce and oil.
