Ingredients

  • 600 ml hot water
  • 3 egg whites
  • 3/4 cup sugar
  • 2 tbs cornflour
  • 2 lemon juiced

Custard

  • 3 egg yolks
  • 2 tbs custard powder
  • 1 tbs sugar
  • 600 ml milk
  • 2 lemon rind zested

Method

  • Step 1
    Snow: Add cornflour, sugar and water into a saucepan and mix to a smooth paste with lemon juice.
  • Step 2
    Stir in water.
  • Step 3
    Stir continually over heat until boiling and thickened.
  • Step 4
    Allow to cool and mix in stiffly beaten egg whites.
  • Step 5
    Pour into a glass serving dish and chill.
  • Step 6
    Custard: Mix egg yolks, lemon rind, custard powder and sugar in a saucepan.
  • Step 7
    Add milk and stir well.
  • Step 8
    Stir continually over heat until custard thickens (should be pouring consistency).
  • Step 9
    Pour into a serving dish or jug, and chill.
Recipe Notes
To serve, spoon a quantity of snow into each individual dish and top with lemon custard. Garnish with a sprig of mint if desired.
