Ingredients

  • 1 1/2 cup plain flour
  • 1/2 cup custard powder
  • 180 g butter
  • 1/3 cup icing sugar
  • 1 tbs lemon rind grated

Method

  • Step 1
    Cream together butter, sifted icing sugar until light and fluffy, add lemon rind.

  • Step 2
    Add sifted dry ingredients and mix to a stiff dough.
  • Step 3
    Roll into small balls and place on ungreased baking trays.
  • Step 4
    Flatten slightly with a fork. Dip fork into flour occasionally to prevent it sticking to dough.
  • Step 5
    Bake at 180C for 10-15 minutes or until set and pale gold in colour.

Watch carefully that these biscuits don't burn.
