A meal that is rich in flavour. Has a good balance between the fresh vegetables and the hearty sausages.
Ingredients
- 500 g Italian pork sausage
- 1 tbs olive oil
- 1 brown onion diced
- 2 cloves garlic crushed
- 2 carrot diced
- 1 celery stick diced
- 1/2 red capsicum diced
- 1/2 tsp sweet paprika
- 1 pinch ground nutmeg
- 1/4 tsp chilli
- 1 pinch black pepper
- 4 tomato diced fresh large
- 6 mushrooms sliced
- 400 g canned cannellini beans
- 400 g canned chopped tomato
- 1 bouquet garni
- 6 broccoli broken into florets cooked
Method

Step 1Fry sausages in a pan, until browned all over, however not necessarily cooked through.

Step 2While sausages are cooking brown onion, garlic, carrots, celery and capsicum in a large saucepan for 5 minutes.

Step 3Add spices and cook until fragrant, approximately 1 minute. Add tomatoes and mushrooms and cook until tomatoes are soft and cooked down.

Step 4Slice up sausages and add to the saucepan, along with the herbs, canned tomatoes and broccoli. Bring to the boil and then simmer for 10 minutes.

Step 5Add cannellini beans and simmer for another 5 minutes. Serve on toast.

Recipe Notes
Bouquet garni should be fresh rosemary, thyme, sage and parsley.
