Individual Beef Curry Pies

Ingredients

  • 750 g rump beef steak
  • 2 potatoes cut into pieces
  • 1 onion diced
  • 1 1/2 cups beef stock (powder)
  • 1 tbs soy sauce
  • 1 tbs Worcestershire sauce
  • 3 tbs oil
  • 4 tbs cornflour
  • 3 sheets puff pastry
  • 3 sheets shortcrust pastry
  • 1 egg lightly beaten
  • 2 tsp coriander
  • 2 tsp ground cumin
  • 2 tsp mild paprika
  • 1 tsp Chinese five-spice powder
  • 1/2 tsp chilli powder optional
  • 1 pinch seasoning *to taste

Method

  • Step 1
    Coat the beef with flour and shake off any excess. Cook the meat quickly on medium heat with oil for 3 minutes.
  • Step 2
    Remove meat from pan and cook the onion and potatoes on medium heat for 2 minutes.

    Add soy sauce, Worcestershire sauce and beef stock to the pan with the onions and potatoes and bring to the boil.
  • Step 4
    Add coriander, cumin, paprika, Chinese five spice, chilli powder, if using, and salt and pepper.
  • Step 5
    Add meat back to the pan and simmer with lid on for 1½ hours, stirring occasionally.
  • Step 6
    Preheat oven to 200C. Lightly grease pie tins with spray oil.
  • Step 7
    Remove meat from heat and allow to cool 10 minutes. Add the cornflour and stir.
  • Step 8
    Place the pie tin upside down onto the shortcrust pastry and cut around the tin, to make the bases for the pies. Place pastry in tin, cut off any excess.
  • Step 9
    Place the filling and gravy into each pastry base.
  • Step 10
    Cut the same size circles with the puff pastry and place on top. Seal the edges.
  • Step 11
    Baste the pies with the egg and bake for 25 minutes until golden.
Recipe Notes

You can also add some peas into the pie mixture or other vegetables. This recipe looks complex when you look at it, but it's very easy to do, and well worth it. Cut potatoes into 1cm pieces.
