Ingredients

  • 3 sheets puff pastry halved
  • 1 carrot coarsely grated
  • 1 zucchini coarsely grated
  • 100 g cheddar cheese grated
  • 2 sprigs parsley roughly chopped
  • 1 onion finely chopped small
  • 2 tbs tomato sauce
  • 1 pinch salt and pepper *to taste
  • 2 egg
  • 500 g Italian pork sausage, casings removed
  • 3 tbs sesame seeds *to decorate
  • 3 tbs poppy seeds *to decorate

Method

  • Step 1
    Preheat oven to 180C.
  • Step 2
    Add cheese, parsley, onion, tomato sauce, one egg, salt and pepper to a large bowl and combine.
  • Step 3
    Wring all the water from the carrot and zucchini.

    Add the carrot, zucchini and sausage meat to the mixture.
  • Step 5
    Mix thoroughly and set aside.
  • Step 6
    Divide the sausage mixture evenly along one side of each pastry sheet.
  • Step 7
    Crack the remaining egg into a small bowl and gently whisk.
  • Step 8
    Paint the exposed pastry lightly with the egg mixture.
  • Step 9
    Gently fold the pastry over the mince to create a sausage roll, pressing the edges firmly with the back of a fork, ensuring the join is tightly sealed.
  • Step 10
    Brush the top of the sausage roll with remaining egg wash and sprinkle with sesame seeds and poppy seeds.
  • Step 11
    Cut the sausage rolls into desired portions.
  • Step 12
    Place on a lightly greased oven tray and bake for 20-25 minutes until golden and cooked through.
Recipe Notes

You can also use Italian veal sausage.
