This is a healthier version of the old fry up favourite from the UK - egg and chips. My family love it. - mikeys_mummy

Ingredients

  • 500 g potato diced
  • 1 onion halved sliced small
  • 1 tbs oil
  • 2 tsp dried oregano
  • 200 g mushrooms halved small
  • 200 g cherry tomatoes halved
  • 4 eggs

Method

  • Step 1
    Preheat oven to 200C.
  • Step 2
    Put potatoes and onion into a roasting tin and drizzle with oil.
  • Step 3
    Sprinkle over the oregano and mix together well.
  • Step 4
    Bake for 15 minutes.
  • Step 5
    Add mushrooms and tomatoes and bake for a further 10 minutes.
  • Step 6
    Make 4 gaps in the mixture and crack an egg into each gap.
  • Step 7
    Return to oven for 5 minutes, or until eggs are done to preference.

Equipment

  • 1 large roasting pan
