This is a healthier version of the old fry up favourite from the UK - egg and chips. My family love it.
Ingredients
- 500 g potato diced
- 1 onion halved sliced small
- 1 tbs oil
- 2 tsp dried oregano
- 200 g mushrooms halved small
- 200 g cherry tomatoes halved
- 4 eggs
Method

Step 1Preheat oven to 200C.

Step 2Put potatoes and onion into a roasting tin and drizzle with oil.

Step 3Sprinkle over the oregano and mix together well.

Step 4Bake for 15 minutes.

Step 5Add mushrooms and tomatoes and bake for a further 10 minutes.

Step 6Make 4 gaps in the mixture and crack an egg into each gap.

Step 7Return to oven for 5 minutes, or until eggs are done to preference.

- 1 large roasting pan
