Delicious simple versatile salad for those who are lucky enough to have a mango tree or good green grocer to access green mango.
Ingredients
- 2 mango unripe
- 2 tbs fish sauce
- 2 tbs soy sauce
- 2 tbs lime juice
- 2 tbs brown sugar
- 2 tsp sweet chilli sauce
- 2 tbs shredded coconut toasted
- 1/4 cup cashews
- 3 spring onion sliced
- 1 cup bean shoots
- 1/2 capsicum optional
Method

Step 1Mix sauces, lime juice and brown sugar for the dressing and set aside.

Step 2Peel and julienne mangoes and capsicum, if using.

Step 3Combine mangoes, capsicum, spring onions, bean sprouts, cashews and coconut in a bowl.

Step 4Pour over dressing close to serving time.
Recipe Notes
Great with seafood or chicken. Mango is best before it turns orange, has a beautiful tang. Peanuts can be used.
