This is my late mum's recipe. She would cook pan after pan of them until we couldn't eat anymore! They are crisp, delicious shallow fried patties.
Ingredients
- 4 potato coarsely grated
- 1 egg
- 1 pinch salt and pepper
- 1 tbs olive oil
- 1 tbs butter
Method

Step 1Squeeze moisture out of grated potato.

Step 2Beat egg and add to potato with salt and pepper.

Step 3Heat frypan with a combination of olive oil and butter.

Step 4Drop tablespoonsful of potato mixture into pan and flatten out.

Step 5Cook until golden brown and crisp.

Step 6Keep warm in oven until remaining pancakes are cooked.
Recipe Notes
These make a great weekend meal or can accompany any meat dishes. Pickles, bbq sauce, any sauce go well with them.
