Healthy, crispy potatoes with flavours that lend it to roasts as well as fish dishes. My favourite.
Ingredients
- 1 kg new potatoes
- 124 ml olive oil
- 1 sprig rosemary
- 2 lemons juiced
- 1 lemon zested
- 3 garlic cloves finely chopped
- 1 tsp sea salt
- 1 tsp ground pepper
Method

Step 1Preheat oven 200C.

Step 2Scrub the potatoes and cube 2.5 cms.

Step 3Boil in hot water 10 minutes and drain.

Step 4In a plastic or ceramic bowl, mix olive oil, rosemary, lemon juice, zest and garlic.

Step 5Pour dressing over hot potatoes and mix, pour into baking dish and bake.

Step 6Stir and turn 3 times in 25 minutes until golden.

Step 7Season and serve.
Recipe Notes
Choosing your potato will have enormous effect on the outcome.
I love these with fresh fried fish especially. These are scrumptious served cold also.
