Ingredients

  • 1 kg new potatoes
  • 124 ml olive oil
  • 1 sprig rosemary
  • 2 lemons juiced
  • 1 lemon zested
  • 3 garlic cloves finely chopped
  • 1 tsp sea salt
  • 1 tsp ground pepper

Method

  • Step 1
    Preheat oven 200C.
  • Step 2
    Scrub the potatoes and cube 2.5 cms.
  • Step 3
    Boil in hot water 10 minutes and drain.
  • Step 4
    In a plastic or ceramic bowl, mix olive oil, rosemary, lemon juice, zest and garlic.
  • Step 5
    Pour dressing over hot potatoes and mix, pour into baking dish and bake.
  • Step 6
    Stir and turn 3 times in 25 minutes until golden.
  • Step 7
    Season and serve.
Recipe Notes

Choosing your potato will have enormous effect on the outcome.

I love these with fresh fried fish especially. These are scrumptious served cold also.
