A tasty chicken dish that can be prepared in advance.
Ingredients
- 4 chicken Maryland pieces
- 2 tbs soy sauce
- 1 tbs lemon juice
- 1 tsp fresh ginger grated
- 1/2 tsp curry powder
- 1 tbs oil
- 2 cloves garlic crushed
- 1/2 tsp salt and pepper
- 4 slices pineapple fresh
Method

Step 1Place chicken pieces in glass bowl. Combine all remaining ingredients except pineapple.

Step 2Pour mixture over chicken and leave stand for at least 2 hours.

Step 3Place chicken and marinade in baking dish and bake uncovered at 180C for 1 hour or until golden brown and cooked through.

Step 4Baste chicken often with marinade.

Step 5Grill pinapple slices 2 minutes on each side and place a slice on top of each chicken maryland before serving.

Recipe Notes
Tinned pineapple can be used if fresh fruit unavailable. Recipe can be doubled for large group of people.
