Ingredients

  • 1 onion diced
  • 1 garlic clove crushed
  • 1 pinch fresh basil
  • 850 g canned whole tomatoes peeled
  • 850 g water
  • 1 tbs tomato paste
  • 1 tsp sugar
  • 1 tbs olive oil

Method

  • Step 1
    Lightly saute onions with oil until soft.
  • Step 2
    Add garlic, tomato paste and stir through.
  • Step 3
    Add tomatoes, basil, water, sugar, salt and pepper.
  • Step 4
    Cover and cook on low to medium heat until sauce thickens.
  • Step 5
    In the meantime boil salted water add pasta of choice.
  • Step 6
    Toss pasta with sauce and sprinkle with parmesan cheese.
Recipe Notes
To vary this recipe – before adding the canned tomatoes add sliced mushrooms, peeled small diced eggplant or sliced zucchini or all of them. If doing this add an extra can of peeled tomatoes to the recipe.
