A refreshingly simple dish that makes the perfect accompaniment to any meal!
Ingredients
- 2 tbs oil
- 2 brown onion finely chopped medium
- 500 g peas
- 3 bacon rashers finely chopped
- 2 garlic clove
- 500 g iceberg lettuce shredded
- 75 g butter
- 1 1/2 tbs lemon juice *optional
Method

Step 1Heat oil in large saucepan over medium heat.

Step 2Cook onion stirring until soft and transparent.

Step 3Add peas, bacon and garlic, cook for about 5 minutes or until peas start to soften.

Step 4Add lettuce, partially cover with saucepan lid or foil and cook for 2 minutes or until lettuce is wilted.

Step 5Add butter, cook for 3 minutes or until butter combines with pan juices and peas are tender.

Step 6Stir in lemon juice.

Step 7Season with salt and freshly ground black pepper.
Recipe Notes
Make sure you have the freshest of ingredients when making this dish. If fresh peas aren't an option, substitute with frozen. Add a splash of water when cooking the onions, this helps along with the cooking process and adds a sweetness to the end result.
