Ingredients

  • 2 cup plain flour
  • 2 tbs icing sugar mixture
  • 125 g butter cubed
  • 1 tsp vanilla extract
  • 1 egg
  • 1/2 cup almond meal
  • 800 g canned pie apple
  • 1 egg whites
  • 1 tbs caster sugar

Method

  • Step 1
    Preheat oven to 200C. Line a baking tray with greaseproof paper.
  • Step 2
    In food processor, combine flour, icing sugar, butter and vanilla until mixture resembles breadcrumbs.
  • Step 3
    Add egg. Process to a soft dough. Wrap and refrigerate for 30 minutes.
  • Step 4
    Roll out pastry to a 30 cm circle. Place on prepared baking tray.
  • Step 5
    Leaving a 2 cm border, sprinkle over almond meal and spread tinned apples over almonds. Fold pastry ends over filling and brush edges with egg white. Sprinkle over caster sugar.
  • Step 6
    Bake for 30-35 minutes or until golden.

Recipe Notes

Yummy served with thick double cream or good vanilla ice cream. I used canned pie apple with cinnamon flavouring.
