A quick and easy slice that is good for lunch boxes and a snack.
Ingredients
- 1 cup dates chopped
- 1/2 cup dried apricots
- 1 cup boiling water
- 1/2 cup brown sugar
- 1 cup oats
- 1 1/4 cup wholemeal plain flour
- 1 tsp bicarbonate of soda
- 2 tbs golden syrup
Method

Step 1Preheat oven to 160c fan forced and grease a slice tray.

Step 2Combine dates and apricots in a large bowl and add golden syrup, bicarbonate of soda and water.

Step 3Let sit for 15 minutes.

Step 4Combine sugar, oats and sifted flour and add to date mix. Stir until well combined.

Step 5Spread into prepared tray and bake for 25-30 minutes until golden on top.

Step 6Stand for 5 minutes before turning onto a wire rack to cool.

I am a diabetic and find this suitable for morning or afternoon tea to keep my blood sugars consistent.
