Ingredients

  • 1 cup dates chopped
  • 1/2 cup dried apricots
  • 1 cup boiling water
  • 1/2 cup brown sugar
  • 1 cup oats
  • 1 1/4 cup wholemeal plain flour
  • 1 tsp bicarbonate of soda
  • 2 tbs golden syrup

Method

  • Step 1
    Preheat oven to 160c fan forced and grease a slice tray.

  • Step 2
    Combine dates and apricots in a large bowl and add golden syrup, bicarbonate of soda and water.
  • Step 3
    Let sit for 15 minutes.
  • Step 4
    Combine sugar, oats and sifted flour and add to date mix. Stir until well combined.
  • Step 5
    Spread into prepared tray and bake for 25-30 minutes until golden on top.
  • Step 6
    Stand for 5 minutes before turning onto a wire rack to cool.

I am a diabetic and find this suitable for morning or afternoon tea to keep my blood sugars consistent.
