An easy to make ganache that doesn't involve too much stirring.
Ingredients
- 125 g dark chocolate
- 2 tbs caster sugar
- 150 ml sour cream
Method

Step 1Melt chocolate either in the microwave or over a simmering saucepan, then leave to cool slightly.

Step 2Whisk in caster sugar.

Step 3Mix in sour cream.
Recipe Notes
Use a good quality dark chocolate. This recipe is something I found in a cupcake book that makes yummy ganache without boiling cream and spending ages stirring in chocolate until it melts. As it stands the mix will thicken and harden, which makes it look gorgeous piped onto cakes. Make sure you use good quality chocolate, cooking chocolate goes hard and doesn't mix in properly.
