Ingredients

  • 2/3 cup orange marmalade
  • 1/4 cup sherry vinegar
  • 4 tbs orange juice
  • 4 tbs lemon juice
  • 2 tbs extra virgin olive oil
  • 1 tsp smoked paprika large
  • 1 1/4 tsp ground cumin
  • 6 beef ribs

Method

  • Step 1
    Heat BBQ to medium/low.
  • Step 2
    Blend first 4 ingredients, 1 tablespoon paprika, and 1¼ teaspoons cumin in non metalic bowl.
  • Step 3
    Season sauce with salt and pepper. Transfer half of sauce to small bowl and reserve.
  • Step 4
    Sprinkle and rub ribs on all sides with paprika, cumin, salt and pepper.
  • Step 5
    Grill 20 minutes, turning occasionally.
  • Step 6
    Brush ribs with some of sauce from bowl. Grill for about 15 minutes until slightly charred and cooked to medium-rare, brushing with remaining sauce in bowl.
  • Step 7
    Transfer ribs to platter. Drizzle with some of reserved sauce in bowl, salt and pepper.
  • Step 8
    Serve with sauce and napkins.
Recipe Notes
This goes great with coleslaw, with mash and scorched green beans. It can become a favourite meal. Low grilling as the sugars will burn easily so don't let it get too hot, basting is the key! You can also use orange/lime marmalade.
