Ingredients

  • 100 g butter
  • 1 cup sugar
  • 1 egg
  • 1 tsp vanilla essence
  • 1 cup plain flour
  • 3 tsp baking powder
  • 1/2 tsp salt
  • 180 ml milk
  • 2 apples
  • 50 g sugar
  • 1 tsp ground cinnamon *to taste

Method

  • Step 1
    Preheat oven to 180C and grease a 18 x 28cm baking pan.
  • Step 2
    Sift flour with baking powder and salt.
  • Step 3
    Cream butter and 200 g of sugar in a large mixing bowl until light.
  • Step 4
    Beat in egg and vanilla until fluffy.
  • Step 5
    Add sifted flour to butter mixture alternately with milk. Combine well.
  • Step 6
    Spread batter into prepared baking pan.
  • Step 7
    Peel and core apples and cut each apple into 8 wedges.
  • Step 8
    Place apples in rows on batter and press in slightly.
  • Step 9
    Combine 50 g of sugar with cinnamon and sprinkle over apples.
  • Step 10
    Bake for 50-60 minutes or until the apples are tender and a wooden skewer pulls from the centre of cake cleanly.
