Lovely served warm with sweetened whipped cream.
Ingredients
- 100 g butter
- 1 cup sugar
- 1 egg
- 1 tsp vanilla essence
- 1 cup plain flour
- 3 tsp baking powder
- 1/2 tsp salt
- 180 ml milk
- 2 apples
- 50 g sugar
- 1 tsp ground cinnamon *to taste
Method

Step 1Preheat oven to 180C and grease a 18 x 28cm baking pan.

Step 2Sift flour with baking powder and salt.

Step 3Cream butter and 200 g of sugar in a large mixing bowl until light.

Step 4Beat in egg and vanilla until fluffy.

Step 5Add sifted flour to butter mixture alternately with milk. Combine well.

Step 6Spread batter into prepared baking pan.

Step 7Peel and core apples and cut each apple into 8 wedges.

Step 8Place apples in rows on batter and press in slightly.

Step 9Combine 50 g of sugar with cinnamon and sprinkle over apples.

Step 10Bake for 50-60 minutes or until the apples are tender and a wooden skewer pulls from the centre of cake cleanly.
