Dutch Apple Pie

Ingredients

  • 2 1/2 cup plain flour sifted
  • 1/2 cup brown sugar
  • 1/4 tsp salt
  • 8 tbs butter grated
  • 1 egg yolks
  • 1 lemon rind grated
  • 500 g apple peeled thinly sliced
  • 1/4 cup raisins
  • 1 tsp ground cinnamon
  • 1/4 cup sugar
  • 2 tbs sugar
  • 2 egg
  • 1/2 cup milk
  • 2 tbs apricot jam

Method

  • Step 1
    Combine flour, brown sugar and salt into a bowl.
  • Step 2
    Grate butter into flour mixture with a pastry blender or two knives until it resembles coarse breadcrumbs.
  • Step 3
    Add egg yolk and lemon rind and a little water if needed.
  • Step 4
    Knead the mixture together into a ball. Wrap in waxed paper and chill for 1 hour.
  • Step 5
    Roll the dough out on a floured or oiled board to a 5 mm thickness. Line the bottom and the sides of a greased 23 cm round tin that has a removable bottom with the pastry.
  • Step 6
    Arrange the apples and raisins on the pastry and sprinkle with the cinnamon and the ¼ cup of sugar.
  • Step 7
    Beat the eggs with the milk and remaining sugar and pour over the apples. Bake the pie in a preheated 190c oven for about 50 minutes.
  • Step 8
    Let the pie cool in the tin. Remove and spread the top of the pie with a thin layer of apricot jam. Serve with whipped cream.
Recipe Notes

To thin jam heat in microwave for a few seconds. This pie will impress your friends. I used cooking apple.
