Sausages cooked and fried with onions, apple and curry powder. Good comfort food.
Ingredients
- 1 kg thick sausages
- 2 tbs white vinegar
- 60 g butter
- 2 onions small
- 1 apple finely chopped small
- 1 tbs curry powder
- 2 1/2 cups beef stock (liquid)
- 1 tbs cornflour
- 1 tbs water
Method

Step 1Prick sausages and place in saucepan with enough cold water to cover, and add vinegar.

Step 2Bring to boil and simmer gently for 10 minutes.

Step 3Drain, cool and remove skins from the sausages.

Step 4Melt butter in a saucepan and fry onions, apple and curry powder.

Step 5Stir until the onions are soft.

Step 6Add stock and bring to the boil while stirring.

Step 7Add sausages and simmer for 10 minutes.

Step 8Blend cornflour with the water and add to sausages, stirring until the mixture boils and thickens.

Step 9Serve with rice.
Recipe Notes
I use beef sausage but you could also use pork.
