Ingredients

  • 1 onion chopped large
  • 3 garlic cloves
  • 2 potatoes diced medium
  • 3/4 cup milk
  • 4 eggs large
  • 1/2 tsp salt and pepper *to taste
  • 1/2 cup self-raising flour
  • 1 cup cheese grated
  • 1 zucchini grated medium
  • 150 g baby spinach roughly chopped washed
  • 1 tomato medium sliced
  • 1 cup tasty cheese

Method

  • Step 1
    Sauté onion and garlic, leave to cool.
  • Step 2
    Steam potatoes, then leave to cool.
  • Step 3
    Whisk milk, eggs, salt and pepper in a bowl.
  • Step 4
    Put flour into a large bowl and gradually add egg mixture and cheese.
  • Step 5
    Add onion, potatoes, zucchini and spinach and mix well.
  • Step 6
    Pour mixture into a greased dish, and arrange tomato slices on top.
  • Step 7
    Cover with extra tasty cheese.
  • Step 8
    Bake at 160C for 45 minutes - 1 hour or until golden brown.

Recipe Notes

Great with a can of pink salmon in the centre when pouring mixture into quiche dish.

Use 1 cup grated cheese for filling.
