A great vegetarian dish with many options.
Ingredients
- 1 onion chopped large
- 3 garlic cloves
- 2 potatoes diced medium
- 3/4 cup milk
- 4 eggs large
- 1/2 tsp salt and pepper *to taste
- 1/2 cup self-raising flour
- 1 cup cheese grated
- 1 zucchini grated medium
- 150 g baby spinach roughly chopped washed
- 1 tomato medium sliced
- 1 cup tasty cheese
Method

Step 1Sauté onion and garlic, leave to cool.

Step 2Steam potatoes, then leave to cool.

Step 3Whisk milk, eggs, salt and pepper in a bowl.

Step 4Put flour into a large bowl and gradually add egg mixture and cheese.

Step 5Add onion, potatoes, zucchini and spinach and mix well.

Step 6Pour mixture into a greased dish, and arrange tomato slices on top.

Step 7Cover with extra tasty cheese.

Step 8Bake at 160C for 45 minutes - 1 hour or until golden brown.

Recipe Notes
Great with a can of pink salmon in the centre when pouring mixture into quiche dish.
Use 1 cup grated cheese for filling.
