Ingredients

  • 250 g butter chopped
  • 50 g ground almonds
  • 1/2 cup caster sugar
  • 2 cup plain flour sifted
  • 1/2 cup Craisins dried cranberries
  • 275 g white chocolate melts

Method

  • Step 1
    Beat butter and sugar until light and creamy.
  • Step 2
    Add sifted flour, ground almonds and craisins and beat until mixture begins to come together.
  • Step 3
    Turn dough onto floured surface and knead gently to form a smooth ball.
  • Step 4
    Wrap in plastic wrap and refrigerate for 20 minutes.
  • Step 5
    Roll half tablespoons of mixture into logs and place on oven trays lined with baking paper.
  • Step 6
    Bake at 160C for 12-15 minutes, or until lightly browned.
  • Step 7
    Leave on trays for 5 minutes, before transferring to a wire rack to cool.
  • Step 8
    Melt white chocolate in microwave on medium for 2 minutes.
  • Step 9
    Dip half of biscuit into chocolate or drizzle chocolate over biscuits, using small strong plastic bag with tiny hole cut in corner.
