Shortbread with a difference. A great recipe for Christmas.
Ingredients
- 250 g butter chopped
- 50 g ground almonds
- 1/2 cup caster sugar
- 2 cup plain flour sifted
- 1/2 cup Craisins dried cranberries
- 275 g white chocolate melts
Method

Step 1Beat butter and sugar until light and creamy.

Step 2Add sifted flour, ground almonds and craisins and beat until mixture begins to come together.

Step 3Turn dough onto floured surface and knead gently to form a smooth ball.

Step 4Wrap in plastic wrap and refrigerate for 20 minutes.

Step 5Roll half tablespoons of mixture into logs and place on oven trays lined with baking paper.

Step 6Bake at 160C for 12-15 minutes, or until lightly browned.

Step 7Leave on trays for 5 minutes, before transferring to a wire rack to cool.

Step 8Melt white chocolate in microwave on medium for 2 minutes.

Step 9Dip half of biscuit into chocolate or drizzle chocolate over biscuits, using small strong plastic bag with tiny hole cut in corner.
