Ingredients

  • 4 egg separated
  • 1 cup icing sugar
  • 1 1/4 cup thickened cream
  • 1/2 cup condensed milk
  • 1/4 cup Cointreau

Topping

  • 1 1/2 cup orange juice
  • 1/4 cup Cointreau

Method

  • Step 1
    Line a 10 x 20 cm loaf pan or 22 cm round spring form pan with greased foil.
  • Step 2
    Beat egg whites until soft peaks form, then gradually beat in egg yolks and fold into egg white mixture.
  • Step 3
    Whip the cream until soft peaks form, then gradually beat in the condensed milk.
  • Step 4
    Fold the cream and condensed milk into the egg mixture, then stir in the icing sugar and Cointreau.
  • Step 5
    Pour evenly into the pan and freeze until firm.
  • Step 6
    Topping: Pour orange juice into a saucepan and simmer to reduce to about 1 cup.
  • Step 7
    Cool, then add Cointreau and pour carefully over the firm ice cream.
  • Step 8
    Freeze, then cover with plastic wrap.
  • Step 9
    To serve, remove ice cream from pan, transfer to plate and cut into slices or wedges.
