Ingredients

Meatballs

  • 500 g beef mince
  • 1 large egg
  • 1/4 tsp paprika
  • 1 garlic clove diced
  • 1/2 tsp black pepper
  • 2 pinches salt
  • 2 pinches cayenne pepper
  • 1 tbs fresh breadcrumbs
  • 1 tbs olive oil

Sauce

  • 1 tbs olive oil
  • 1 chorizo sausage sliced
  • 1/4 red capsicum seeded thinly sliced
  • 1/2 garlic clove diced
  • 1 tbs tomato paste
  • 1 pinch black pepper
  • 1.4 kg tomato pasta sauce
  • 4 cup white rice cooked *to serve

Method

  • Step 1
    Meatballs: In a mixing bowl, whisk the egg with paprika, garlic, pepper, salt and cayenne pepper.
  • Step 2
    Add beef mince and combine (best mixed by hand).
  • Step 3
    Add breadcrumbs and combine again.
  • Step 4
    Heat oil in a large pan.
  • Step 5
    Form beef mixture into small balls. Add to pan and fry on medium heat whilst preparing the sauce.
  • Step 6
    Sauce: Heat oil in saucepan. Add chorizo, capsicum, garlic and pepper. Turn until sizzling and brown.
  • Step 7
    Add prepared tomato sauce and mix through. Allow to simmer for about 30 minutes.
  • Step 8
    When meatballs are browned and cooked through, serve meatballs and sauce on a bed of white rice.
