Ingredients
Meatballs
- 500 g beef mince
- 1 large egg
- 1/4 tsp paprika
- 1 garlic clove diced
- 1/2 tsp black pepper
- 2 pinches salt
- 2 pinches cayenne pepper
- 1 tbs fresh breadcrumbs
- 1 tbs olive oil
Sauce
- 1 tbs olive oil
- 1 chorizo sausage sliced
- 1/4 red capsicum seeded thinly sliced
- 1/2 garlic clove diced
- 1 tbs tomato paste
- 1 pinch black pepper
- 1.4 kg tomato pasta sauce
- 4 cup white rice cooked *to serve

Step 1Meatballs: In a mixing bowl, whisk the egg with paprika, garlic, pepper, salt and cayenne pepper.

Step 2Add beef mince and combine (best mixed by hand).

Step 3Add breadcrumbs and combine again.

Step 4Heat oil in a large pan.

Step 5Form beef mixture into small balls. Add to pan and fry on medium heat whilst preparing the sauce.

Step 6Sauce: Heat oil in saucepan. Add chorizo, capsicum, garlic and pepper. Turn until sizzling and brown.

Step 7Add prepared tomato sauce and mix through. Allow to simmer for about 30 minutes.

Step 8When meatballs are browned and cooked through, serve meatballs and sauce on a bed of white rice.
