Ingredients

  • 3 banana large ripe
  • 1 lemon juiced
  • 2 cup self-raising flour
  • 1 tsp baking powder
  • 150 g butter softened
  • 150 g light brown sugar
  • 2 egg beaten large
  • 3/4 cup choc bits

Method

  • Step 1
    Preheat oven to 180C.
  • Step 2
    Grease a 1 kg loaf tin with butter and line with greaseproof.
  • Step 3
    Mash bananas with the lemon juice in separate bowl and leave aside.
  • Step 4
    Sift flour and baking powder onto sheet of greaseproof paper.
  • Step 5
    In a mixing bowl, beat the butter and sugar together with a wooden spoon until light and creamy.
  • Step 6
    Add the eggs a little at the time, beating well after each one.
  • Step 7
    Carefully fold ½ the flour mixture into the egg mixture.
  • Step 8
    Fold in the mashed bananas, then the remaining flour mixture and the chocolate chips. Pour into loaf tin and level.
  • Step 9
    Bake for 1 hour. Leave to cool in tin for about 10 minutes before turning out onto rack.

  • 1 loaf pan
Recipe Notes
If you have no choc chips then grate some chocolate roughly.
