Nice simple, light meal with salad or as starter for a BBQ.
Ingredients
- 500 g chicken thigh fillets
- 1 tsp lime rind, finely grated
- 1 tbs olive oil
Chilli garlic mayonnaise
- 1 egg yolks
- 2 garlic clove crushed
- 2 tbs lime juice
- 2 tbs sweet chilli sauce
- 1 cup peanut oil
- 1 tbs fresh coriander coarsely chopped
Method

Step 1Cut chicken into 3 cm cubes and thread onto 8 skewers.

Step 2Combine rind, juice and oil in a shallow dish, add skewers and turn to coat well. Cover and stand for 10 minutes.

Step 3Cook skewers in batches, brushing with marinade on heated, oiled grill plate until browned all over.

Step 4Serve kebabs with chilli garlic mayonnaise.

Step 5Chilli garlic mayonnaise: Blend or process egg yolk, garlic, juice and sauce until smooth. With motor operating, gradually add the oil in a thin stream, blend until thick. Stir in coriander.

- 8 bamboo skewers
Recipe Notes
Kebabs can be marinated and mayonnaise can be made a day ahead. Store, covered, in refrigerator. If preferred kebabs can also be cooked in a moderate oven until browned and cooked through, line tray with non stick paper, place kebabs on paper.
