Tasty and very easy.
Ingredients
- 10 tortillas
- 375 g mild Mexican taco sauce
- 600 g chicken breast fillet cubed
- 1 onion chopped
- 1 cup mushrooms sliced
- 250 g low-fat cottage cheese
- 2 tbs sour cream
- 1/2 cup parsley chopped fresh
- 1 cup cheese grated
Method

Step 1In frypan add onion, mushrooms and chicken and cook over gentle heat until just cooked.

Step 2In a separate container combine the enchilada sauce, sour cream, cottage cheese and parsley. Mix half of this mixture with fry pan mixture.

Step 3Heat tortilla's in microwave for 20 seconds. Place 2 tablespoons of chicken mixture on each tortilla and roll.

Step 4Place each tortilla seam side down in greased ovenproof dish.

Step 5Spread remaining sauce over the top and sprinkle with grated cheese.

Step 6Bake in moderate over for 15-20 minutes until cheese is melted.
Recipe Notes
You can use chicken thighs or any kind of mince. I use enchilada sauce.
