Ingredients

  • 10 tortillas
  • 375 g mild Mexican taco sauce
  • 600 g chicken breast fillet cubed
  • 1 onion chopped
  • 1 cup mushrooms sliced
  • 250 g low-fat cottage cheese
  • 2 tbs sour cream
  • 1/2 cup parsley chopped fresh
  • 1 cup cheese grated

Method

  • Step 1
    In frypan add onion, mushrooms and chicken and cook over gentle heat until just cooked.
  • Step 2
    In a separate container combine the enchilada sauce, sour cream, cottage cheese and parsley. Mix half of this mixture with fry pan mixture.
  • Step 3
    Heat tortilla's in microwave for 20 seconds. Place 2 tablespoons of chicken mixture on each tortilla and roll.
  • Step 4
    Place each tortilla seam side down in greased ovenproof dish.
  • Step 5
    Spread remaining sauce over the top and sprinkle with grated cheese.
  • Step 6
    Bake in moderate over for 15-20 minutes until cheese is melted.
Recipe Notes
You can use chicken thighs or any kind of mince. I use enchilada sauce.
