A delicious slice which keeps well.
Ingredients
- 1/2 cup self-raising flour
- 1/2 cup plain flour
- 1/2 cup dates chopped
- 1 cup mixed fruit
- 1/2 cup cherries
- 1 cup brown sugar
- 1 cup walnuts chopped
- 1 cup coconut
- 2 tsp vanilla essence
- 1 egg
- 125 g butter melted
Method

Step 1Mix all ingredients together and press into a 28 cm square cake tin.

Step 2Bake at 150C for 40-45 minutes.
Recipe Notes
I like to soak the cherries in brandy.
Allow to cool in tin before cutting.
Keeps well in the freezer and thaws very quickly if needed in a hurry.
Don't skimp on the vanilla as it really adds to the flavour.
