Ingredients

  • 1/2 cup self-raising flour
  • 1/2 cup plain flour
  • 1/2 cup dates chopped
  • 1 cup mixed fruit
  • 1/2 cup cherries
  • 1 cup brown sugar
  • 1 cup walnuts chopped
  • 1 cup coconut
  • 2 tsp vanilla essence
  • 1 egg
  • 125 g butter melted

Method

  • Step 1
    Mix all ingredients together and press into a 28 cm square cake tin.
  • Step 2
    Bake at 150C for 40-45 minutes.
Recipe Notes

I like to soak the cherries in brandy.

Allow to cool in tin before cutting.

Keeps well in the freezer and thaws very quickly if needed in a hurry.

Don't skimp on the vanilla as it really adds to the flavour.
