Cheesy Vegetable Pasta Bake

Ingredients

  • 250 g pasta
  • 3 cup mixed vegetables chopped into pieces
  • 1/2 cup bacon rashers diced
  • 1 1/2 cup cheese grated
  • 2 tbs butter
  • 2 tbs self-raising flour
  • 2 cup milk

Method

  • Step 1
    In a medium saucepan, cook pasta until tender.
  • Step 2
    Place vegetables into a saucepan and cook until tender. Drain.
  • Step 3
    In a small saucepan, melt the butter. Add flour and ¼ of the milk, whisk until smooth then add the rest of the milk and ½ cup of the cheese.
  • Step 4
    Stir continuously until sauce is thick.
  • Step 5
    Add half the sauce mixture to the vegetables and add the other half to the pasta. Mix both carefully until well combined.
  • Step 6
    Place pasta in a large casserole dish and layer with the vegetables.
  • Step 7
    Sprinkle with diced bacon and remaining cheese.
  • Step 8
    Bake at 180C until cheese is melted and golden brown.
Recipe Notes
I use spiral pasta and use carrot, broccoli, cauliflower. But you can use whatever vegetables you prefer.
