A simple and yummy dish.
Ingredients
- 8 potato medium
- 4 spinach
- 1 onion finely chopped
- 1 1/2 cup tasty cheese grated
- 1 pinch salt and pepper
- 1 1/2 cup cheese grated
Method

Step 1Preheat oven to 180C.

Step 2Peel and cook potatoes. When cooked, mash potatoes adding a little milk so they're not dry.

Step 3Cook spinach until soft. Drain.

Step 4Mix together mashed potato, spinach, onion and cheese. Season to taste.

Step 5Place in oven proof dish. Sprinkle extra cheese on top.

Step 6Cook for 30-35 minutes or until cheese has browned.
Recipe Notes
Variations: Use pumpkin or sweet potato cooked and mixed in with mashed potato. Celery can also be added for extra taste. This is also great used as the top to shepherds pie. Perfect for freezing. Use stalks spinach or silverbeet and remove stalks and leaves.
