Ingredients

  • 1/2 cup plain flour
  • 1 tsp salt
  • 1 cup cheddar cheese grated
  • 4 egg beaten well
  • 1/4 cup milk
  • 60 g margarine melted
  • 1 onion medium
  • 2 potato medium
  • 1 carrot small
  • 1 zucchini medium

Method

  • Step 1
    Preheat oven to 175C.
  • Step 2
    Lightly grease a casserole dish.
  • Step 3
    Sift flour and salt into a large bowl. Stir in cheese, eggs, milk, and melted margarine.
  • Step 4
    Grate onion, carrot and potato into the mixture.
  • Step 5
    Stir to combine.
  • Step 6
    Pour mixture into casserole dish and place casserole in a pan of water containing 2 cm of water.
  • Step 7
    Bake in oven, uncovered for 1½ hours.

  • 1 casserole dish
Recipe Notes
This dish is also very nice served with an onion gravy. Cottage cheese can be used. Carrot can be substituted with parsnip or choko.
