Perfect as a side dish with any kind of roast.
Ingredients
- 1 cauliflower broken into florets
- 1 onion chopped
- 100 g bacon rashers chopped
- 3 tbs parsley chopped
- 40 g butter
- 1/4 cup plain flour
- 1 3/4 cup milk
- 100 g taleggio cheese broken into pieces
- 1 pinch nutmeg
- 1 tsp dijon mustard
- 1/4 cup parmesan cheese
- 1/3 cup dried breadcrumbs
- 1/2 tsp salt
- 1/2 tsp pepper
Method

Step 1Preheat oven to 160C (fan forced).

Step 2Cook cauliflower in boiling, salted water for approximately 4 minutes, until just tender.

Step 3Drain well and place into a greased baking dish.

Step 4Fry the onion and bacon over medium heat for approximately 4 minutes, until they start to change colour. Add parsley and stir to combine.

Step 5Spoon mixture over the cauliflower.

Step 6Melt butter over medium heat. Stir in the flour and stir continuously to prevent lumps forming.

Step 7Slowly add milk, whilst stirring, and bring to the boil.

Step 8Add the Taleggio cheese and stir until melted through.

Step 9Season with salt and pepper, then add nutmeg, mustard and half of the Parmesan cheese.

Step 10Pour sauce over the cauliflower and top with remaining Parmesan and breadcrumbs.

Step 11Bake for 15 minutes until golden.
