Ingredients

  • 1 cauliflower broken into florets
  • 1 onion chopped
  • 100 g bacon rashers chopped
  • 3 tbs parsley chopped
  • 40 g butter
  • 1/4 cup plain flour
  • 1 3/4 cup milk
  • 100 g taleggio cheese broken into pieces
  • 1 pinch nutmeg
  • 1 tsp dijon mustard
  • 1/4 cup parmesan cheese
  • 1/3 cup dried breadcrumbs
  • 1/2 tsp salt
  • 1/2 tsp pepper

Method

  • Step 1
    Preheat oven to 160C (fan forced).
  • Step 2
    Cook cauliflower in boiling, salted water for approximately 4 minutes, until just tender.
  • Step 3
    Drain well and place into a greased baking dish.
  • Step 4
    Fry the onion and bacon over medium heat for approximately 4 minutes, until they start to change colour. Add parsley and stir to combine.
  • Step 5
    Spoon mixture over the cauliflower.
  • Step 6
    Melt butter over medium heat. Stir in the flour and stir continuously to prevent lumps forming.
  • Step 7
    Slowly add milk, whilst stirring, and bring to the boil.
  • Step 8
    Add the Taleggio cheese and stir until melted through.
  • Step 9
    Season with salt and pepper, then add nutmeg, mustard and half of the Parmesan cheese.
  • Step 10
    Pour sauce over the cauliflower and top with remaining Parmesan and breadcrumbs.
  • Step 11
    Bake for 15 minutes until golden.
