Ingredients

  • 240 g self-raising flour
  • 1/2 tsp bicarbonate of soda
  • 1 tsp ground cinnamon
  • 1/2 cup brown sugar
  • 1 cup carrot grated
  • 1 cup zucchini grated
  • 240 g dates chopped
  • 1/2 cup milk
  • 90 g butter melted
  • 2 egg lightly beaten

Method

  • Step 1
    Preheat oven to 220C and spray 12 hole muffin pan.
  • Step 2
    Sift flour, soda and cinnamon into bowl. Stir in brown sugar, carrot, zucchini and dates.

  • Step 3
    Make a well in the centre. Add melted butter, milk and eggs.
  • Step 4
    Mix with fork until well combined. Spoon into muffin tray.
  • Step 5
    Bake 20 minutes. Stand in tin for 5-10 minutes before turning out onto a cooling rack.

  • 1 12-hole muffin pan
Recipe Notes

This is a very nice muffin if you don't want to have a "totally" sweet treat. Very easy to throw together. I usually add a little bit more cinnamon as I like a stronger cinnamon taste.
