A healthy tasty muffin that hides a few vegetables.
Ingredients
- 240 g self-raising flour
- 1/2 tsp bicarbonate of soda
- 1 tsp ground cinnamon
- 1/2 cup brown sugar
- 1 cup carrot grated
- 1 cup zucchini grated
- 240 g dates chopped
- 1/2 cup milk
- 90 g butter melted
- 2 egg lightly beaten
Method

Step 1Preheat oven to 220C and spray 12 hole muffin pan.

Step 2Sift flour, soda and cinnamon into bowl. Stir in brown sugar, carrot, zucchini and dates.

Step 3Make a well in the centre. Add melted butter, milk and eggs.

Step 4Mix with fork until well combined. Spoon into muffin tray.

Step 5Bake 20 minutes. Stand in tin for 5-10 minutes before turning out onto a cooling rack.

Recipe Notes
This is a very nice muffin if you don't want to have a "totally" sweet treat. Very easy to throw together. I usually add a little bit more cinnamon as I like a stronger cinnamon taste.
