Blanched broccolini and beans with pine nuts and anchovies.
Ingredients
- 1 tbs olive oil
- 1 tbs butter
- 2 garlic clove crushed
- 1 pinch salt
- 45 g anchovy fillet chopped drained
- 1/3 cup pine nuts
- 200 g broccolini
- 200 g green beans
Method

Step 1Cook broccolini and beans in a large saucepan of water with a pinch of salt. Boil on high until cooked through but still with a slight crunch. Drain and set aside.

Step 2Dry roast pine nuts in a fry pan until browned. Remove and set aside.

Step 3Using the same pan, heat olive oil, garlic and butter.

Step 4Add anchovies and cook on high for 2 minutes.

Step 5Reduce heat to medium. Add pine nuts, broccolini and beans, and heat through.
