Ingredients

  • 1 tbs olive oil
  • 1 tbs butter
  • 2 garlic clove crushed
  • 1 pinch salt
  • 45 g anchovy fillet chopped drained
  • 1/3 cup pine nuts
  • 200 g broccolini
  • 200 g green beans

Method

  • Step 1
    Cook broccolini and beans in a large saucepan of water with a pinch of salt. Boil on high until cooked through but still with a slight crunch. Drain and set aside.
  • Step 2
    Dry roast pine nuts in a fry pan until browned. Remove and set aside.
  • Step 3
    Using the same pan, heat olive oil, garlic and butter.
  • Step 4
    Add anchovies and cook on high for 2 minutes.
  • Step 5
    Reduce heat to medium. Add pine nuts, broccolini and beans, and heat through.
