If you like blueberries and white chocolate you will love these muffins.
Ingredients
- 1 cup frozen blueberries
- 2 cup self-raising flour
- 3/4 cup brown sugar
- 1/2 cup white choc bits
- 1 egg lightly beaten
- 3/4 cup buttermilk
- 1/2 cup vegetable oil
Method

Step 1Pre-heat oven to 180C and line muffin tin with patty papers.

Step 2Place dry ingredients into a mixing bowl.

Step 3Stir in buttermilk, egg and oil. Gently fold through blueberries.

Step 4Spoon mixture into prepared muffin tins.

Step 5Bake for 25-30 minutes or until cooked.

Recipe Notes
I use frozen blueberries and get them out of the freezer right at the end to keep them frozen. Adding a cup of blueberries makes each muffin generous with the fruit. I also cook them on the top shelf so they brown nicely.
