Ingredients

  • 1 cup frozen blueberries
  • 2 cup self-raising flour
  • 3/4 cup brown sugar
  • 1/2 cup white choc bits
  • 1 egg lightly beaten
  • 3/4 cup buttermilk
  • 1/2 cup vegetable oil

Method

  • Step 1
    Pre-heat oven to 180C and line muffin tin with patty papers.
  • Step 2
    Place dry ingredients into a mixing bowl.

  • Step 3
    Stir in buttermilk, egg and oil. Gently fold through blueberries.
  • Step 4
    Spoon mixture into prepared muffin tins.
  • Step 5
    Bake for 25-30 minutes or until cooked.

  • 1 paper patty cases
  • 1 bowl
  • 1 wooden spoon
Recipe Notes

I use frozen blueberries and get them out of the freezer right at the end to keep them frozen. Adding a cup of blueberries makes each muffin generous with the fruit. I also cook them on the top shelf so they brown nicely.
