Have had this recipe in my collection for over 35 years, and every time I make it my family asks for it more often. Just try it and you will agree, I'm sure.
Ingredients
- 750g pork sausages
- 1 onion finely chopped
- 1 granny smith apple finely chopped
- 2 tsp curry powder
- 1 tbs plain flour
- 2 tsp Woolworths Essentials Brown Sugar
- 1 1/2 cups Beef Style Liquid Stock
- 2 tsp mango chutney
- 2 tsp sultanas
- 1 tsp apricot jam
- 1 tomato diced
- 1 tbs coconut
- 1 cup milk
- 1 tsp salt and pepper *to taste
- 1 knob butter
Method

Step 1Gently boil the sausages for approximately 15 minutes, then peel off skin and cut in half.

Step 2In a frying pan, add a knob of butter and saute onion and apple for 10 minutes.

Step 3Add curry powder, flour and brown sugar, and brown for 5 minutes.

Step 4Add beef stock, chutney, sultanas, apricot jam and salt and pepper.

Step 5Gradually add milk, tomatoes and coconut.

Step 6Place sausages into curry mixture, simmer gently for 15 minutes, and serve with fresh beans and boiled rice.
