Easy, filling, tasty burritos that everyone loves. An awesome Friday-night family meal, or an easy help-yourself meal for entertaining.
Ingredients
- 1 tbs olive oil
- 400 g beef mince
- 1/2 onion finely chopped
- 2 beef stock cube
- 1 tsp paprika
- 1/2 tsp chilli powder
- 35 g taco seasoning
- 400 g canned crushed tomatoes
- 400 g red canned kidney beans
- 1 carrot grated
- 8 burrito tortillas
- 2 tomato sliced
- 200 g lettuce
- 200 g cheese grated
- 8 tbs sour cream
- 8 tbs salsa
Method

Step 1In a large saucepan, heat olive oil over a medium heat and add chopped onion, cooking until slightly browned.

Step 2Add mince, and when mince is almost cooked through, add stock cubes, paprika, chilli powder and taco seasoning. Mix through until mince is cooked.

Step 3Add the crushed tomatoes, kidney beans and grated carrot, stir through and turn heat to low. Allow mixture to simmer, stirring occasionally, for at least half an hour.

Step 4Preheat oven to 200C.

Step 510 minutes before serving, place the tortillas in the oven to warm through.

Step 6Spoon meat mixture onto each warm tortilla, and serve with the sour cream, salsa, lettuce, sliced tomato and grated cheese.
Recipe Notes
Try other toppings like capsicum slices, mushroom slices, corn kernels or onions.
