I have tried many and various recipes to try and create "Gloria Jeans" style banana bread. After many failed attempts and countless efforts to perfect the almost successful outcomes, I have finally created this recipe.
Ingredients
- 1 cup self-raising flour
- 1 1/4 cup hazelnut meal
- 1 tsp bicarbonate of soda
- 1 tsp ground cinnamon
- 3/4 cup brown sugar firmly packed
- 120g butter
- 2 egg
- 3 banana mashed ripe
- 1/3 cup golden syrup
- 1 tsp vanilla extract
Method

Step 1Cream butter and brown sugar. Add eggs and beat until well combined.

Step 2Mix flour, cinnamon, bicarbonate of soda and hazelnut meal into a bowl and set aside.

Step 3Add golden syrup and vanilla extract to mashed banana and mix lightly.

Step 4Add half of the flour mixture and half of the banana mixture to the butter mixture and mix until well combined.

Step 5Add remaining flour and banana and mix until well combined.

Step 6Pour mixture into a well greased and lined loaf pan.

Step 7Bake at 160C for approximately 45-50 minutes.

Recipe Notes
This recipe has a tendency to burn on the top, I usually cover with foil after approximately 30 minutes cooking time. You may also want to add sliced banana to the top of the loaf and glaze with golden syrup. By adding extra butter, sugar and syrup you will create a delicious banana pudding. Divine served with ice-cream or custard.
