This is a hearty meal for a cold winter's day.
Ingredients
- 1 1/2 kg chuck beef steak
- 1/2 cup plain flour
- 2 tbs vegetable oil
- 30 g butter
- 4 potatoes large peeled thickly sliced
- 4 onions sliced
- 2 carrots large thickly sliced
- 1 tsp black peppercorns
- 3 cups beer
- 2 tbs soy sauce
- 3 bay leaves
- 2 cups beef stock (liquid)
Method
-
Step 1Preheat the oven to 180C.
-
Step 2Trim meat of excess fat and cut into 2 cm cubes. Toss in flour and shake off excess.
-
Step 3Heat oil and butter in heavy-based pan. Cook the meat quickly in small batches until the outside is well browned. Drain on paper towel.
-
Step 4Arrange potatoes in the bottom of a deep 14-cup casserole dish. Place the meat, onions and carrots on top. Sprinkle with pepper corns. Pour in beer, beef stock, soy sauce and bay leaves.
-
Step 5Bake uncovered for 2 hours or until meat is tender. Serve with crusty bread.
Recipe Notes
I use old floury potatoes, as they break down and thicken the sauce.
It's also great to do in the slow cooker.
