Quick and easy to make vegetarian meal, even the meat lovers like it.
Ingredients
- 3 tbs olive oil
- 2 onion chopped
- 2 tsp caster sugar
- 250 g button mushrooms sliced
- 2 garlic clove sliced
- 2 tsp mild chilli powder
- 1 tbs ground coriander
- 350 g red pepper sauce
- 300ml vegetable stock
- 410 g canned chickpeas drained rinsed
- 410 g black-eye fresh beans drained rinsed
Method

Step 1Heat the oil in a large saucepan and fry the onions and sugar over a high heat until deep golden.

Step 2Add the mushrooms, garlic, chilli powder and ground coriander and fry for 2-3 minutes.

Step 3Stir in the pepper sauce, stock, chickpeas and beans. Bring to the boil, reduce heat, cover and simmer gently for 20 minutes. Season with salt and pepper.
Recipe Notes
Serve with garlic bread and a mixed salad. You can use swiss brown mushrooms if you prefer and I also add extra, because I love them. I used caned black-eye beans.
