Ingredients

  • 3 tbs lukewarm water
  • 5 tsp gelatine powder
  • 1/2 cup liquid glucose
  • 6 cup icing sugar sifted

Method

  • Step 1
    Mix warm water and gelatin in a small bowl until dissolved.
  • Step 2
    Add the glucose and stir until dissolved. Leave to cool for a few minutes.
  • Step 3
    In a large bowl, sift confectioners sugar, then sift again to make sure there are no lumps.
  • Step 4
    Make an indention in the centre of the sifted sugar and pour in the gelatin mixture.
  • Step 5
    Stir with a wooden spoon until combined.
  • Step 6
    Dust work surface with confectioners sugar.
  • Step 7
    Turn fondant mixture out onto the work surface and work the powdered sugar in with hands.
  • Step 8
    Wrap fondant mixture in plastic wrap as air-tightly as possible and store in a sealed container while working with smaller pieces of it.
  • Step 9
    This will help keep it from forming a crust.
  • Step 10
    If a crust forms, sprinkle a little confectioners sugar over it and knead.
