Delicious perfect pikelets every time.
Ingredients
- 1 egg lightly beaten
- 25 g butter melted
- 1/3 cup milk
- 2 tbs caster sugar
- 1 tbs vanilla essence
- 1 cup self-raising flour
- 1/2 cup choc bits
- 1 banana mashed
Method

Step 1Whisk egg, butter, milk, sugar and essence in a bowl until combined.

Step 2Slowly sift flour into mixture and whisk until it forms a smooth batter.

Step 3Stir in chocolate chips and banana.

Step 4Heat a large non-stick frying pan brushed with butter.

Step 5Spoon 1 tablespoon of batter into pan and repeat to make 4 pikelets. Cook until bubbles appear on surface.

Step 6Turn pikelets and cook until lightly browned.
Recipe Notes
You can vary the chocolate chips and banana to your liking. Pikelets can be made up to 2 days ahead. Keep in an airtight container or freeze for up to 2 months.
