Ingredients

  • 1 egg lightly beaten
  • 25 g butter melted
  • 1/3 cup milk
  • 2 tbs caster sugar
  • 1 tbs vanilla essence
  • 1 cup self-raising flour
  • 1/2 cup choc bits
  • 1 banana mashed

Method

  • Step 1
    Whisk egg, butter, milk, sugar and essence in a bowl until combined.
  • Step 2
    Slowly sift flour into mixture and whisk until it forms a smooth batter.
  • Step 3
    Stir in chocolate chips and banana.
  • Step 4
    Heat a large non-stick frying pan brushed with butter.
  • Step 5
    Spoon 1 tablespoon of batter into pan and repeat to make 4 pikelets. Cook until bubbles appear on surface.
  • Step 6
    Turn pikelets and cook until lightly browned.
Recipe Notes
You can vary the chocolate chips and banana to your liking. Pikelets can be made up to 2 days ahead. Keep in an airtight container or freeze for up to 2 months.
