Ingredients

  • 4 quince
  • 1 L water
  • 1 lemon
  • 2 cup caster sugar
  • 4 whole cloves
  • 1 cinnamon stick
  • 1/2 vanilla bean

Method

  • Step 1
    Place water, sugar, cloves, cinnamon and vanilla bean sliced down middle in saucepan.

  • Step 2
    Stir over heat to dissolve sugar.
  • Step 3
    Slice quinces in half and fit snugly into a baking dish.
  • Step 4
    Slice lemon thickly and place on top of quinces.
  • Step 5
    Pour syrup over quinces and cover with baking paper and lid.
  • Step 6
    Cook at 120C for 2½ hours. Turn fruit gently half way through cooking.
  • Step 7
    Fruit and juice should be a deep red colour. Serve hot or cold with cream.
Recipe Notes

Cooking time may take 3 plus hours depending on size and age of fruit.
