Baked Potatoes with Salmon and Peas

Ingredients

  • 4 coliban potato medium
  • 1/2 cup frozen peas
  • 4 tbs low-fat sour cream
  • 400 g canned pink salmon deboned drained flaked skin off
  • 4 tbs fresh chives finely chopped
  • 4 tbs low-fat tasty cheese grated
  • 1 oil spray

Method

  • Step 1
    Preheat oven to 180C.
  • Step 2
    Spray potatoes with oil, wrap in foil and bake for 30 minutes.
  • Step 3
    Unwrap potatoes and bake for a further 30 minutes, or until golden and tender.
  • Step 4
    Increase the oven temperature to 220C. Meanwhile, cook peas until tender.
  • Step 5
    Cut a thin slice from the top of each potato and discard. Using a teaspoon, scoop out the flesh of the potato in a medium bowl.
  • Step 6
    Add the sour cream to the potato flesh and mash until smooth.
  • Step 7
    Stir in peas, salmon and half of the chives. Season with salt and pepper.
  • Step 8
    Place potato jackets on an oiled baking tray. Spoon salmon mixture into jackets and sprinkle with cheese.
  • Step 9
    Bake for 10 minutes or until golden. Serve sprinkled with remaining chives.
Recipe Notes
I like to add some chopped shallots to this recipe instead of chives, usually because that is what I have in the kitchen. My kids love to have this with a little bit of sweet chilli sauce on top.
