Tasty and great way to get kids to eat seafood.
Ingredients
- 4 coliban potato medium
- 1/2 cup frozen peas
- 4 tbs low-fat sour cream
- 400 g canned pink salmon deboned drained flaked skin off
- 4 tbs fresh chives finely chopped
- 4 tbs low-fat tasty cheese grated
- 1 oil spray
Method

Step 1Preheat oven to 180C.

Step 2Spray potatoes with oil, wrap in foil and bake for 30 minutes.

Step 3Unwrap potatoes and bake for a further 30 minutes, or until golden and tender.

Step 4Increase the oven temperature to 220C. Meanwhile, cook peas until tender.

Step 5Cut a thin slice from the top of each potato and discard. Using a teaspoon, scoop out the flesh of the potato in a medium bowl.

Step 6Add the sour cream to the potato flesh and mash until smooth.

Step 7Stir in peas, salmon and half of the chives. Season with salt and pepper.

Step 8Place potato jackets on an oiled baking tray. Spoon salmon mixture into jackets and sprinkle with cheese.

Step 9Bake for 10 minutes or until golden. Serve sprinkled with remaining chives.
Recipe Notes
I like to add some chopped shallots to this recipe instead of chives, usually because that is what I have in the kitchen. My kids love to have this with a little bit of sweet chilli sauce on top.
