Bacon and Paprika Potato Wedges

Ingredients

  • 1 1/2 kg baby potatoes
  • 1 tbs olive oil
  • 1 tbs paprika
  • 6 bacon rashers chopped
  • 1/2 cup cheddar cheese grated

Method

  • Step 1
    Pre-heat oven to 200C.
  • Step 2
    Cut potatoes in wedges.
  • Step 3
    Place wedges into a large bowl, add olive oil and toss well.
  • Step 4
    Add paprika and toss until well coated.
  • Step 5
    Place wedges into an aluminium foil barbeque tray.
  • Step 6
    Bake for 40 minutes.
  • Step 7
    Sprinkle chopped bacon over wedges and cook for another 10 minutes.
  • Step 8
    Sprinkle grated cheese over wedges and cook for a further 10 minutes until cheese has melted.
Recipe Notes

You can use gruyere or tasty cheese instead of cheddar.

I use an aluminium tray as it can be filled to the brim and is easy to take to barbecues to be reheated.
