A quick and easy standby when time is short.
Ingredients
- 1 tbs vegetable oil
- 4 spring onion chopped
- 1 garlic clove sliced
- 1 bunch asparagus
- 6 bunch button mushrooms sliced
- 4 egg
- 1/4 cup milk
- 1 pinch chilli powder
- 1 pinch salt and pepper *to taste
Method

Step 1Heat an oven-proof fry pan with the oil.

Step 2Add the spring onions and garlic and sauté until cooked.

Step 3Add the mushrooms and fry until cooked down.

Step 4Slice asparagus into 2.5 cm lengths. Beat egg with milk and chilli powder. Season to taste.

Step 5Add the asparagus. Toss through quickly to heat and then add the egg mixture. Cook on a slow heat for 2 minutes. Season with salt and pepper.

Step 6Serve with salad and warm bread rolls.

Step 7Place pan under a hot grill until the top of the frittata is cooked through and golden brown.
