Ingredients

  • 1 tbs vegetable oil
  • 4 spring onion chopped
  • 1 garlic clove sliced
  • 1 bunch asparagus
  • 6 bunch button mushrooms sliced
  • 4 egg
  • 1/4 cup milk
  • 1 pinch chilli powder
  • 1 pinch salt and pepper *to taste

Method

  • Step 1
    Heat an oven-proof fry pan with the oil.
  • Step 2
    Add the spring onions and garlic and sauté until cooked.
  • Step 3
    Add the mushrooms and fry until cooked down.
  • Step 4
    Slice asparagus into 2.5 cm lengths. Beat egg with milk and chilli powder. Season to taste.
  • Step 5
    Add the asparagus. Toss through quickly to heat and then add the egg mixture. Cook on a slow heat for 2 minutes. Season with salt and pepper.
  • Step 6
    Serve with salad and warm bread rolls.
  • Step 7
    Place pan under a hot grill until the top of the frittata is cooked through and golden brown.
