A delicious creamy corn quiche with asparagus. This is a lovely vegetarian dish.
Ingredients
- 1 onion chopped
- 3 shallots chopped
- 1 tbs butter
- 310 g cream-style canned corn
- 310 g canned asparagus cut into pieces
- 300 ml thickened cream
- 2 egg beaten
- 2 tbs parsley chopped
- 1 sheet shortcrust pastry optional
- 1/2 tsp salt and pepper *to taste
Method

Step 1Heat butter in saucepan and add chopped onion and shallots. Cook over heat until onion is tender.

Step 2Combine drained asparagus, creamed corn, beaten eggs and cream in a bowl and mix well.

Step 3Add onion mixture with salt and pepper to taste.

Step 4Pour into a greased quiche dish and bake at 180C for 40-50 minutes or until set.

Recipe Notes
I used to make this with a home made pastry as the base, but I don't think it needs it. I have also used a shortcrust pastry sheet or even no base at all. Sometimes it cooks quicker depending on the oven. You can use drained corn kernels if you don't have creamed corn for a different texture which is also nice.
