Ingredients

  • 125 g soft butter
  • 1/3 cup caster sugar
  • 2 egg
  • 1 1/4 cup almond meal
  • 2 tbs plain flour sifted
  • 400 g canned apricot drained halved
  • 1 tbs apricot jam

Method

  • Step 1
    Preheat oven to 180C. Grease a 17 cm x 28 cm slab pan and line with baking paper.
  • Step 2
    Using an electric mixer, beat butter, sugar and eggs in a bowl until well combined.
  • Step 3
    Stir in almond meal and flour, and mix well.
  • Step 4
    Spread mixture into slab pan. Place apricots, cut side up, on top, pressing in slightly.
  • Step 5
    Bake slice for 18-20 minutes or until a skewer inserted into the centre comes out clean.
  • Step 6
    Place jam in a heatproof, microwave-safe bowl. Microwave, uncovered, on high for 30 to 40 seconds or until warm. Brush warm jam over hot slice. Cool completely in pan, then cut into pieces.
Recipe Notes
If the apricot halves are large, you may need to cut them in half. Store slice in a single layer in an airtight container in the fridge for up to 5 days. Remove from fridge 30 minutes before serving. Can be made successfully using gluten free plain flour instead.
